Creole and Cajun

This so far was my favorite week, I love cajun and creole food.
Tomato and Vericot, Vert Salad
New orleans style shrimp bisque
Roasted eggplant and Oysters
Crawfish etouffe
Chicken and andouille sausage gumbo
Jumbalaya 
Chicken maquechoux with braised leeks
Fried fish with remoulade and smothered okra
Bread Pudding with whiskey sauce
Like I said this week was my favorite so far.  The gumbo was so good, well everything was amazing.  Even the tomato and vert salad.  Vert is just a fancy word for green beans by the way.  I just wish we could have spent more time on this style.

So here we go, its week 5, another great menu.  Although it is fun to cook Latin American food, it is definitely not my stlye.
Hearts of Palm Soup  
Mushroom Ceviche
Spinach and Cheese Tamales
Chicken with Shrimp And Nut Sauce
Pulled Beef with Rice and Beans
All the food was awesome, I was really surprised by the mushroom ceviche, it was really tasty! The pulled beef was my favorite, slow braised flank steak, pulled then sauted so damn good.

Mexican Menu #3

Chips and guacamole 




I dont like guacamole but this was awesome number one new show!

Red chicken soup
The Chicken isnt red, its called that because it is made with tomatoes
Rice with Grilled Quail

Chile Relleno with a walnut cream sauce
Tamales with a Mole Sauce
Mexican Chocolate Souffle
Now these I was most proud of.  This was my first time making Souffle, and they turned out perfect.

Southern menu #2

So I decided to do this a little different.  Instead of doing seperate posts for every item, i am going to post by Menu. This is southern menu #2.

                          VIDALIA ONION TART WITH A TOMATO SAUCE AND A BASIL OIL SAUCE


                                                               SHRIMP PERLOO

CAROLINA PULLED PORK SANDWICH WITH HAND CUT SLAW, POTATO SALAD AND BBQ SAUCE

BANANA PUDDING PARFAIT WITH LAYERS OF BANANA PUDDING, NILLA WAFERS AND HOMEMADE PEANUT BRITTLE DUSTED. 

This meal was a lot of fun to make.  But I warn you if you are making more than the recipe says for the shrimp perloo it needs to cook longer than 20 minutes.

Applesauce cake with carmel sauce

The ninja bakes again.  I am starting to figure out I am actually quite good at baking.  This cake rocked!

garlic, honey roasted duck with roasted potatoes and pearl onions.

Ok the slow roasted duck was moist and the skin was crispy I could eat this all the time.  Garlic and honey 2 of my favorite things and added to a sauce mmmm My glow level was 11 on this one.

braised short ribs, hand made noodles and sauted spinach and chard.

This was an amazing meal, and actually easy to make.  The ribs came out fork tender.  Yes i am available for parties!

Soft shell crabs with endive salad

Perhaps one of the oddest things I have ever eaten.  You eat the shell and all.  It was actually quite good.

Buffalo wings

Perhaps the greatest thing ever invented!(we even made the bleu cheese dressing from scratch)

This soup came out so good I would have ate 3 bowls but we only made 2.(unhappy face inserted here)

MMMM Pork Chops!

Pork chops Brasied in white wine.  With a reduction of the braising liquid, and an apple Coulis.
With a side of slow braised spinach with garlic and bacon.

The pork was so tender it was easily cut with the fork, didnt even need to use my Ninja powers.
The apple coulis was a nice accent to the dish.
